Recipe Notes
We made these with our friends at Sticky Fingers Cooking, a fellow Colorado brand that runs cooking classes for kids. They’re simple enough for young chefs to make with a little help, and fancy enough for brunch. Using Rudi’s Daily Power Protein bread adds 10 grams of plant-based protein per serving to a breakfast that already gets protein from eggs. Custardy on the inside, golden and crisp on the outside, with a sweet caramelized finish inspired by classic crème brûlée. See the original recipe!
Ingredients
Servings: 6
- 6 slices Rudi’s Daily Power Protein Sourdough, White, or Ancient Grain Bread
- 1 (14 oz) can sweetened condensed milk
- 1 tsp pure vanilla extract
- 3 eggs
- 1/4 cup water
- 1/4 cup vegetable oil
- Syrup, berries, or your favorite toppings for serving
Directions
- In a large mixing bowl, whisk together the sweetened condensed milk, vanilla, eggs, and water until smooth. This is your custard.
- Cut each slice of bread into long, thick strips.
- Soak the strips in the custard, turning to coat so each piece is fully soaked.
- Heat the vegetable oil in a large frying pan over medium-high heat for about 1 minute.
- Add the soaked strips in a single, even layer. Cook about 4 minutes per side, until deep golden brown.
- Serve warm, straight from the pan, with syrup for dunking or drizzling.
Allergy-Friendly Swaps:
- Dairy-free: Replace the condensed milk with 1 cup coconut cream plus 1/4 cup granulated sugar.
- Egg-free: Replace the 3 eggs with 2 Tbsp ground flaxseed stirred into 1/4 cup warm water. Let it sit 5 minutes to thicken.
- Soy-free: Use canola oil or another high-smoke-point oil instead of vegetable oil.
