Travel-Friendly Sandwiches: The Sunny Recipe

Ingredients

Servings: 1

  • 1/2 whole avocado (mashed)
  • 1 whole hard boiled egg (peeled and sliced)
  • 1 tbsp sunflower seeds

Directions

  1. Spread the mashed avocado over 2 slices of any favorite Rudi’s bread.
  2. Layer the egg slices over the avocado on one slice and then sprinkle the sunflower seeds over the egg.
  3. Top with the other slice of bread and cut in half. Wrap sandwich or pack in a reusable bag or to-go container.
